I’ve been lacking energy the past few weeks. I think it has been a combination of work stress, lack of sunlight during this cold, dark season, and not eating well. I’ve certainly indulged over the past month, which I can feel and see. I’m committed to getting back on track this month with healthier meals, smarter portions, and making working out a routine again.
It won’t be easy-this month brings a lot of change. Between renting out the house four different times through Airbnb and starting my new job with two week-long work trips, one international, I’ll be on the go a lot.
I found this recipe for no bake energy bites, and they are the perfect snack to bring on the road. What’s more, they are healthy and incredibly filling!
No Bake Energy Bites
Ingredients:
1 C oats (old fashioned)
2/3 C coconut flakes
1/2 C peanut butter
1/2 C flax seed
1/2 C chocolate chips
1/3 C honey
1 T chia seeds
1 t vanilla
Directions:
Combine all ingredients in bowl and mix.
Set in refrigerator for 20 minutes to harden slightly.
Remove from fridge and arrange into bars or balls.
