We kicked off the New Year with a relaxing weekend up north and had this delicious comfort dinner one night. We both loved it, and I absolutely love that everything can be made in one pot, making clean up incredibly easy! I’m already thinking of recreating this for a dinner party paired with a simple salad, crusty bread, and plenty of vino.
Spicy Sausage One Pot Pasta:
Ingredients:
1 lb Italian sausage (or if you love really spicy, go for hot&spicy sausage)
1 chopped onion
4 cloves minced garlic
4 c chicken stock
1 1/2 c crushed tomatoes
1/2 c heavy cream
1 lb pasta (use something thicker, like rigatoni)
2 T parsley
2 C pepper jack cheese
1/2 C red wine
olive oil
crushed red pepper flakes
Directions:
Drizzle olive oil into dutch oven or stock pot.
Add in sausage, cooking until browned. Remove from pot, and cut into slices.
Add chopped onions to pot and cook about 4 minutes.
Add red wine (any table wine is fine) to deglaze pan.
Once wine has been absorbed, add stock, sausage, crushed tomatoes, cream, minced garlic, pasta, and red pepper flakes to the pot.
Stirring frequently, cook until pasta is done. (About 10-12 minutes)
Top with cheese and parsley and serve.
