This is one of those easy meals that doesn’t involve a lot of prep work, ingredients, and is also very affordable to make. The added bonus is that it is healthy, really delicious, and you probably have everything on hand.
Pesto Prosciutto Chicken with Roasted Cauliflower
Preheat oven to 350 degrees.
Lay cauliflower on the bottom of the baking dish. Drizzle with lemon grapeseed oil and toss. Add one clove minced garlic and a dash of salt. (If you don’t want cauliflower, asparagus would also be great!)
Season chicken liberally with salt & pepper.
Cut a slit in the chicken breasts and fill with pesto.
Wrap prosciutto slices around the chicken to keep pesto in.
Bake for 35-40 minutes.
