This is one of the easiest appetizers you can bring somewhere this weekend. It requires very little prep, looks great, and disappears fast.
Endive blades can be found packaged at the grocery store along the “garden wall” with celery, lettuce, kale, swiss chard, etc.
Endive Blades with Crab Salad
1 lb crab meat (or package of the imitation stuff)
1 diced cucumber
1 diced tomato
1/4 c chopped green onion
3 cloves pressed garlic
1/4 cup (or 1/2 if you like creamier) mayo
Chop, mix, and spoon into endive blades
Endive Blades with Goat Cheese, Honey, and Blackberries
Endive Blades with Goat Cheese, Beets, and Crushed Nuts
puree beat with goat cheese and spoon into endives. Top with toasted walnuts or crushed pistachios
(this one would be excellent around the holidays with the colors!)
