I love dips more than almost any food, and lately I’ve been making a lot of easy salsas and dips for barbecues and pool days. I’m on a kick with this roasted red pepper feta dip lately, bringing it to two fourth of july parties, a world cup party, and making a batch for myself for the week. This recipe came from my sister Christie, who has a blog devoted completely to her vegetarian lifestyle and all the amazing meals she makes. I’ve gotten a lot of compliments on this one and it is super easy to make!
Red Pepper Feta Dip
Ingredients:
1 jar roasted red peppers
2 cloves garlic
4 oz feta
1/2 pack cream cheese
salt
olive oil
Directions:
In a food processor, pulse roasted red peppers. Add chopped garlic and season with salt. Pulse until well blended. Add cream cheese and blend. Add 2/3 of the feta and pulse again. With the food processor still running, stream in olive oil until it is the consistency/texture you want. (I like mine a little thicker.) Add the rest of the feta and stir with a spoon to combine. Season with a dash more salt.
Serve with tortilla chips, crostinis, veggies, or use as a dip for your favorite barbecue meats.
