Sometimes you pass a 6 pack in the supermarket and…Tecate Tuesday is born!
Did you know that 6 packs were created because they were the perfect weight for housewives to carry home? A bag of groceries in one hand and a 6 pack in the other.
To be honest, I couldn’t decide on flavor profile as I started craving both Bang Bang Shrimp and Street Corn while in the supermarket. There are no rules in my kitchen, so I just went for it along with a side of cherry tomatoes and rice. I’d make both again, but I’d probably do the bang bang shrimp with a lemon risotto and the street corn with zesty lime and avocado shrimp tacos. (That would probably make a lot more sense!)
Mexican Street Corn Salad
2 T olive oil
3 oz cheese (cotija or feta)
juice of 1 lime
3 T light mayo
1/3 c cilantro
1/4 chopped red onion
2 cloves minced garlic
1/2 t chili powder
salt & pepper, to taste
1 chopped jalapeno
1. Heat olive oil in pan
2. add corn, stirring slightly. Remove once it is slightly charred
3. Mix rest of the ingredients in a bowl.
1. Grill skewered shrimp 2 minutes on each side
